  1. Get 2 cups Basmati rice
  2. Get 400 ml coconut milk

Steps to make Rice & peas:
  1. With medium heat,Cook red kidney beans (with water, so don’t drain), coconut milk, grated ginger, grated garlic, all spice, salt, dark brown sugar, chopped onion, thymes, spring onion, and 200 ml chicken stocks (if you don’t use stock, add water instead).
  2. When it simmers, you can taste it and add more seasonings (up to your taste). Wash and drain the rice with cold water 3 times. Now add rice to the pot. Then add the rest of stock (100 ml) and 100 ml cold water to cover the rice. If you don’t use stock, you just need to add 200 ml of cold water. Make sure the water covers the rice by about 5 cms (2-3 inches) With medium-low heat, close the lid for 20 minutes.
  3. After 20 minutes, open the lid and check. The water has already should been absolved by the rice. If not, leave it for a couple of minutes. Now close the lid and set the heat to lowest heat for 10 minutes.
  4. Take the pot of the heat, leave the lid close for 5-10 minutes before serving.
