- First of all select Lotus stems that r straight and round enough. Peel Lotus Stems and cut them in 2 inch pieces. Wash and boil them.
- Clean spinach leaves wash it and blanch it and keep aside.
- Hollow the boiled Lotus stem with the help of knife and back side of spoon very carefully, it should not break.
- In a bowl take grated cottage cheese add salt, green coriander and resins.
- Stuff cottage cheese mixture in hollow Lotus stems and shallow fry them in fry pan. Keep left cheese mixture for decoration.
- Grind onion, ginger and garlic in mixer grinder. Take it out in a bowl now puree blanched spinach with green chillies and keep aside.
- Take a wok, switch on the gas. Add 3 tablespoons oil in wok and heat it. When oil is warm enough add cumin seeds, when splutter add cloves and ginger garlic and onion paste into it. And fry them till become pinkish. Now add curd and cream and fry it till oil separate. Now add spinach puree in it and boil it for 5 minutes. Now Green gravy is ready.
- Now take serving bowl, pore green gravy in it. Place stuffed Lotus stem in it and decorate it with cottage cheese.
