- Take 1 tbsp caramelized onions

Instructions to make Grilled Fish with Awadhi Creamy Potato, Veggie Rosti & Greens:
- Grilled Fish: Season the fish with salt and pepper, drizzle oil, coat it and grill from both sides.
- Awadhi Creamy Potato: Saute the Potato cubes till golden brown and keep aside.
- Heat oil in a kadhai, add cumin seeds, cinnamon, cardamom, mace, clove and saute for 30 seconds.
- Add onion, ginger, garlic and saute for around 10 minutes.
- Make a smooth paste of cooked onion mixture and sauted cashew nuts.
- Heat butter in a kadhai, add the blended paste and cook in low medium flame for 10-12 minutes. Add milk in between to set the consistency of gravy.
- Put the sauted potato dice and season the gravy and add other powder spices. Cook for 4-5 minutes and finish with cream.
- Rosti: Take all the ingredients (except butter) of Rosti in a bowl, give it a well mix. Make small patties and shallow fry in tawa using butter till brown crispy texture.
- Greens: Take a bowl put arugula, seasoning, cherry tomatoes, caramelized onions and salad oil, give a nice mix with light hands.
- Assemble: Place Rosti in the center of plate, put greens on top followed by Grilled fish. Pour the Awadhi Creamy Potato around the Rosti and drizzle olive oil on the sides of creamy sauce. Garnish with micro greens.
