- Get 150 g dried chickpeas

- Soak 150g of chickpeas in plenty of water overnight. These will swell considerably to make approximately 400g chickpeas once drained.
- Drain and rinse chickpeas. Put into pan and bring to the boil. Turn down the heat and simmer for 2 hours, making sure the water does not run dry. Alternatively cook them in a slow cooker for 8 hours on a low heat setting.
- Allow to cool then add to food processor alongside lemon juice, garlic, tahini paste and oil and blend until smooth. Alternatively you can mash with a fork if you prefer more texture as I do. Sprinkle over paprika if liked.
- Job done! Keeps well in the fridge for several days. Freezes well also. Defrost in fridge overnight.
