- Add small amount of oil to the heated fraying pan and cook Chicken Mince. *Note: Chicken Mince is very sticky. Once Chicken started cooking, do not muck around with it and let it cook for a while. When the bottom is cooked, flip it over, then you can start breaking it.
- Add Spring Onion, but reserve some green pieces. When Spring Onion started getting soft, add seasoning mixture. Bring it to the boil and keep cooking for a few minutes.
- Beat the Eggs and pour the egg over evenly, sprinkle preserved green Spring Onion over, but DO NOT stir. Cover the pan with a lid, if you have it, until the egg is set.
- Half fill a bowl with freshly cooked rice and cover it with the chicken & egg ('Oyako' means parent & child) mixture.
