- The lotus root has strong residue, it will get darker without soaking in the water before cooking.
- Peel the lotus root and cut into bite-size chunks. Mix 1-cup water and 1-teaspoon vinegar into a bowl. Soak lotus root in it for 10 minutes and drain. Heat sesame oil in a skillet. Add red chili pepper and stir for a few minutes. Add lotus root and stir for a few minutes.
- When the lotus root is heated thoroughly, add soy sauce, sweet cooking sake and soup stock. Stir constantly.
- Before you dish up, you should taste it. If the taste is weak, please add 1-teaspoon of soy sauce.
