- Take 1 head cauliflower, de-stalked and chopped,

Instructions to make Gobi Masala:
- Add the oil to a saucepan and add in the onions. Stir to coat in the oil and fry over a medium heat for several minutes until the just begin to lightly brown and soften. Add in the cumin and stir through. Fry for a few seconds then add in the cauliflower florets. Stir gently.
- Add in all the remaining spices and the salt. Add the garlic too. Stir to combine and fry off the spices for a few seconds until fragrant. Pour in the water and bring to a gentle simmer. Place over a lid. Simmer, stirring occasionally until the water has completely reduced down and the cauliflower is nice and tender. Serve up and enjoy. :)
