I used chicken tenders for my Chow Mein, but chicken breast will work as well. Because these are relatively lean cuts of chicken and are easy to dry out, I highly recommend.

  1. Boil the eggs and slowly fry the cooked chicken in the ghee
  2. Put your chilli and garlic in with the chicken at a low heat and stir occasionally
  3. Put the egg noodles and rice noodles along with the kale, in a saucepan. Then pour boiling water over them just enough to cover them. (Do not put heat on to cook these as they will cook in the hot water)
  4. After about 5 minutes, drain the water out from the saucepan of noodles and kale and then put the noodles into the chicken and then add the gravy. Mix it all up and serve with your desired herbs and eggs :)
  5. We used the left over chicken from the day before, we used the chicken juices and added some gravy granules to make the gravy the day before too, we then used the gravy to pour into the noodles as it added saltiness to the dish* you can use a chicken stock if you don’t have gravy.
